Combine ingredients
In a cocktail shaker, add vodka, passion fruit purée, pineapple juice, fresh lime juice, caramel syrup, vanilla syrup, and egg white (if using).
Dry shake
Without ice, seal the shaker and shake vigorously for 15 seconds to emulsify the egg white and build a silky texture and foam.
Wet shake
Add ice to the shaker (about 1 cup) and shake very hard for 10–15 seconds until the outside of the shaker is frosty and well chilled.
Double strain and serve
Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to catch pulp and ice shards. The surface should have a light foam.
Garnish & Shot
Add garnish
Float one halved fresh passion fruit, cut-side up, on the surface of the cocktail. If using passion fruit pulp, spoon about 1 tsp of pulp onto the foam in the center.
Serve Lyre's Classico
Pour one shot of Lyre’s Classico into a small shot glass and serve it on the side. Traditionally the shot is served alongside for sipping between sips of the martini, or poured into the cocktail to taste.
