Heat a heavy skillet (cast-iron or stainless steel) over medium-high heat. Add oil to reach about 1/8" depth (≈1 cup). Heat until shimmering and a small piece of tortilla bubbles immediately (about 350°F if using a thermometer).

Working in batches, carefully add 2–3 tortillas to the hot oil and fry 20–40 seconds per side, flipping once, until blistered and very crisp. Use tongs to hold edges so they cook evenly. Total frying time per tortilla ≈40–80 seconds depending on thickness.

Transfer crisped tostadas to a paper-towel-lined rack or tray and immediately season both sides with fine sea salt (use about 1 tsp total across all tostadas). Let cool — they will continue to harden as they rest.

Avocado Smash

Halve and pit the avocados and scoop flesh into a medium bowl. Add 2 tbs lime juice, minced shallot, 2 tbs chopped cilantro, 1 tsp black pepper and 1/2 tsp salt.

Using a fork or potato masher, coarsely mash the avocado to a chunky purée (leave some texture). Taste and adjust salt or lime. Keep covered with plastic wrap pressed to the surface to prevent browning if not using immediately.

Pico de Gallo Smash

Combine the very finely diced tomatoes (drain excess seeds/juice with a mesh strainer if watery), diced red onion, minced jalapeño, 1 tbs lime juice, 2 tbs chopped cilantro and 1/2 tsp salt in a bowl.

Mix gently and press a roughly 1/3 cup of the pico into a small bowl or mortar and use the back of a spoon to lightly crush/smash it — you want a slightly saucy, chunky smash rather than loose salad. Adjust seasoning to taste.

Sweet Piquanté Pepper Sauce

Place drained piquanté peppers, honey, apple cider vinegar, olive oil, smoked paprika and 1/4 tsp salt in a blender or food processor. Blend until smooth, adding up to 2 tbs water to reach a pourable but slightly thick sauce consistency.

Taste and adjust balance: add a pinch more salt, an extra tsp honey for sweetness, or another 1/2 tbs vinegar for brightness. Transfer to a squeeze bottle or small bowl for plating.

Assembly & Finish

Spread about 2 tbs of the avocado smash evenly over each cooled tostada, leaving a small border.

Top each avocado layer with 1–2 tbs of the pico de gallo smash (or a bit more if desired).

Drizzle the sweet piquanté pepper sauce over each tostada in a thin zigzag (about 1 tbs sauce per tostada).

Sprinkle each tostada with crumbled cotija (about 2 tbsp per tostada), a few cilantro leaves, and a tiny pinch of additional smoked paprika if you like.

Serve immediately with lime wedges and optional pickled red onion on the side. Finish with a quick squeeze of lime over each tostada before eating.
