If using store-bought corn tostada shells, warm them in a 375°F (190°C) oven for 5–7 minutes and sprinkle lightly with sea salt. If using corn tortillas, brush both sides lightly with oil and either shallow-fry in a skillet over medium-high heat (about 1–1½ minutes per side until crisp and golden) or bake on a sheet at 400°F (200°C) for 6–8 minutes, flipping once, until crisp. Keep warm on a wire rack.

Press and slice tofu

Drain tofu and press for 15–20 minutes between paper towels or a clean kitchen towel with a weight on top to remove excess water. Pat dry. Slice tofu into 8–10 thin slabs about 1/3 inch thick, or cut into 1/2-inch cubes if you prefer bite-sized pieces.

Season and coat

In a shallow bowl combine cornstarch, smoked paprika, ground cumin, garlic powder, chipotle powder, onion powder, black pepper and kosher salt. Lightly toss each tofu piece in the cornstarch mixture to coat evenly; shake off excess.

Fry until crisp

Heat neutral oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering. Add coated tofu pieces in a single layer without overcrowding. Fry 3–4 minutes per side (for slabs) or 2–3 minutes per side (for cubes) until a deep golden brown and crisp. Work in batches and add more oil if needed. Transfer to a paper-towel-lined plate and immediately squeeze 1 tablespoon lime juice over the hot tofu to brighten flavor.

Keep tofu warm in a low oven (200°F / 95°C) while finishing other components.

Corn-avocado layer

If using fresh corn, cook kernels in a hot dry skillet 2–3 minutes until lightly charred; let cool. In a bowl, scoop avocado flesh and roughly mash with a fork leaving some texture. Stir in charred or thawed corn, minced red onion, cilantro, jalapeño (if using), 1 tablespoon lime juice, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust seasoning. Set aside.

Pico de gallo smash

In a small bowl combine diced tomatoes, finely diced red onion, chopped cilantro, 1 tablespoon lime juice and 1/2 teaspoon salt. Lightly smash with the back of a spoon or the edge of a spatula until ingredients release juices but still retain texture. This should be fresh and bright — refrigerate briefly if making ahead.

Piquanté pepper sauce

Place piquanté peppers (drained) in a blender or food processor with mayonnaise, honey (or agave), sherry vinegar and smoked paprika. Puree until smooth. If the sauce is too thick, add 1 tablespoon water at a time to reach a pourable, drizzling consistency. Season with 1/4 teaspoon salt and taste-adjust. Transfer to a squeeze bottle or small bowl.

Assembly & garnish

Lay warm tostada shells on a work surface. Spoon about 2 tablespoons of the corn-avocado mixture onto each tostada and spread gently to form a base layer.

Top each with 2–3 pieces of the crispy spiced smoked tofu (or enough to cover).

Spoon 1–2 teaspoons of the pico de gallo smash over the tofu for fresh acidity and texture.

Drizzle 1–2 teaspoons of the piquanté pepper sauce over each tostada for a sweet-piquant finish.

Finish with a sprinkle of crumbled cotija or queso fresco if using, scatter extra cilantro leaves and serve with lime wedges alongside for squeezing.

Serve immediately so tostadas remain crisp. Leftover sauce and avocado mixture can be refrigerated (sauce up to 5 days, avocado mixture 1 day).
