Cook tater tots

Preheat oven to 220°C (425°F) if roasting, or heat oil in a deep pan to 180°C (350°F) if frying. Toss frozen tater tots with 3 tbs vegetable oil, smoked paprika, salt and black pepper so they are evenly coated.

If roasting: Spread tots in a single layer on a baking sheet lined with parchment. Bake 20–25 minutes turning once at 12 minutes, until deep golden and crispy. If frying: Fry in batches 3–4 minutes until golden and drain on paper towels. Keep warm in a low oven (100–120°C / 210–250°F) while you make sauces.

Peri-Peri Sauce (VE)

Roast or char the half red bell pepper over a gas flame, under a broiler, or in a hot pan until skin is blackened. Place it in a bowl covered with cling film for 5 minutes, then peel and roughly chop. (You can use pre-roasted jarred red peppers to save time.)

In a small blender or food processor combine roasted red pepper, red chili, garlic cloves, red wine vinegar, lemon juice, olive oil, smoked paprika, dried oregano, salt and maple syrup. Blitz until smooth or slightly textured, scraping down sides once. Taste and adjust seasoning and heat—add more chili for heat or a little more maple syrup if too sharp.

Transfer to a small bowl. If you prefer a thinner sauce, whisk in an additional teaspoon of olive oil or a splash of water until desired consistency.

Garlic & Herb Sauce (VE)

In a bowl combine vegan mayonnaise and plant-based yogurt until smooth.

Stir in the minced garlic, chopped parsley, chives, lemon juice, olive oil, salt and black pepper. Taste and adjust seasoning—add more lemon for brightness or more mayo/yogurt to mellow the garlic. Chill for at least 10 minutes to let flavors marry.

Assembly & Finish

Place the hot tater bites on a serving platter or individual plates.

Drizzle about 1–2 tbs peri-peri sauce over the tots, then drizzle 1–2 tbs garlic & herb sauce in a contrasting pattern. Reserve extra sauce separately for dipping.

Scatter the finely chopped parsley and sliced spring onions over the top for freshness and color.

Serve immediately while the tots are hot and crispy alongside extra peri-peri and garlic & herb sauces on the side.
