Form patties

Divide the ground beef into two equal portions (about 8 oz / 225 g each). Gently form each portion into a loose patty about 3/4"–1" thick and slightly wider than the bun. Do not overwork the meat to keep patties tender.

Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.

Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tablespoon vegetable oil and let it heat until shimmering.

Place patties in the hot pan and cook 3–4 minutes without moving to develop a crust. Flip and cook another 3 minutes for medium doneness. During the last 1 minute of cooking on the second side, place 2 slices of Monterey Jack on each patty (or 1 slice per patty if you prefer) and cover pan for 30–60 seconds to melt cheese.

Remove patties to a plate and let rest 2–3 minutes while you finish other components.

Bacon

While patties cook (or preheat oven to 400°F / 200°C if preferred), cook bacon until crisp. For stovetop: heat a separate skillet over medium heat in a single layer and cook bacon 3–5 minutes per side until crisp. For oven: lay bacon on a rimmed sheet and bake 12–16 minutes until crisp.

Transfer cooked bacon to a paper towel–lined plate to drain and keep warm. Break each slice in half if needed to fit buns (3 slices per burger).

Cheese sauce

In a small saucepan over medium heat, melt 1 tablespoon unsalted butter. Whisk in 1 tablespoon all-purpose flour and cook, whisking, for 30–45 seconds to make a roux (do not brown).

Gradually whisk in 3/4 cup whole milk and bring to a gentle simmer, whisking constantly, until the sauce thickens, about 2–3 minutes.

Reduce heat to low and stir in 3/4 cup shredded cheddar cheese and 2 tablespoons softened cream cheese until fully melted and smooth. Stir in 1/2 teaspoon mustard, a pinch of hot sauce (1/8 tsp), and 1/4 teaspoon salt. Taste and adjust seasoning. Keep warm on the lowest heat, stirring occasionally.

Assembly & finishing

Lightly butter the cut faces of the 2 hamburger buns (about 1 tablespoon total). Toast buttered buns in a skillet over medium heat until golden, about 1–2 minutes per side.

On the bottom bun, place a lettuce leaf, then the first cheese-topped beef patty. Drizzle 1 tablespoon BBQ sauce over the patty. Add 3 slices of crisp bacon and a couple pickle slices and a sprinkle (about 2 tablespoons) of thinly sliced red onion.

Place the second cheese-topped patty on top of the bacon. Spoon 1–2 tablespoons of warm cheese sauce over the top patty, then add remaining bacon if desired. Drizzle an additional 1 tablespoon BBQ sauce over the cheese sauce.

Top with the top bun and press gently to nest the layers. Serve immediately with remaining BBQ sauce on the side if desired.
