Method
Bacon
Preheat the oven to 400°F (200°C). Arrange bacon slices in a single layer on a rimmed baking sheet lined with foil or a rack. Bake 12–18 minutes until crispy, turning pan halfway if not using a rack. Remove and place on paper towels to drain and keep warm.
Beef Patties
Form Patties
Divide the ground beef into 4 equal portions (about 4 oz each). Gently shape each portion into a 3/4-inch thick patty, forming a slight indentation in the center with your thumb to prevent doming during cooking. Do not overwork the meat.
Season
Season both sides of each patty with kosher salt and freshly ground black pepper. Lightly brush one side of each patty with Worcestershire sauce.
Cook
Heat a large cast-iron skillet or griddle over medium-high heat and add 1 tsp vegetable oil. When shimmering, place patties seasoned-side down (work in two batches if necessary). Cook undisturbed 3–4 minutes until a brown crust forms. Flip and cook 2–3 minutes more for medium (adjust time for desired doneness).
Buns & Spread
While patties cook, mix mayonnaise, ketchup and mustard in a small bowl to make the burger spread. Taste and adjust seasoning (optional: add a few drops of hot sauce or a pinch of garlic powder).
Veggies & Assembly
Thinly slice the tomato and onion if not already sliced. Wash and dry lettuce leaves.
Assemble each burger: spread about 2 tablespoons of burger spread on the bottom bun. Place the cheesy patty on top, then layer 1–2 slices of bacon, 2 pickle slices, a couple of onion rings (about 2 tbsp worth), a tomato slice, and a lettuce leaf. Spread a small amount of spread on the top bun and place on top.
Serve immediately with fries or salad. Leftover patties can be refrigerated and eaten within 2 days.
