Toast bagel

Slice the bagel horizontally and toast to desired crispness in a toaster or under a broiler (about 2–4 minutes).

Prepare avocado spread

Scoop the flesh from half a ripe avocado into a small bowl. Add 1 tsp fresh lemon juice, 1/4 tsp salt, 1/8 tsp black pepper and 1/2 tsp olive oil if using. Mash with a fork until mostly smooth with a few small chunks for texture. Taste and adjust seasoning.

Assemble base

Immediately after toasting, spread the mashed avocado evenly on the cut sides of the warm bagel so the heat helps meld flavors.

Poached Egg

Bring water to a gentle simmer

Fill a shallow saucepan or wide skillet with about 1 liter of water. Add 1 tsp white vinegar and bring to a gentle simmer over medium heat. You want small bubbles on the bottom but not a rolling boil.

Create a gentle whirlpool (optional)

Use a spoon to stir the water in one direction to create a small whirlpool — this helps the egg white wrap around the yolk for a neater poach. This step is optional but useful especially for very fresh eggs.

Crack and slide egg

Crack the fresh egg into a small ramekin or cup. Hold the ramekin close to the water surface and gently slide the egg into the center of the simmering water. Reduce heat if necessary so simmering remains gentle.

Cook to preferred doneness

Let the egg poach undisturbed for 3 minutes for a runny yolk, 3.5–4 minutes for slightly set yolk. Use a slotted spoon to lift the egg and run your finger gently to check the firmness.

Drain and season

Using a slotted spoon, lift the poached egg and let excess water drain back into the pan. Briefly blot on a paper towel if desired. Sprinkle lightly with a pinch of fine salt (about 1/8 tsp) and set aside on a plate.

Toppings & Final Assembly

Place egg on bagel

Carefully place the poached egg on top of the avocado-spread half of the bagel.

Add seasonings and garnish

Sprinkle 1/8 tsp red pepper flakes over the egg, add 1/2 tsp everything bagel seasoning if using, and scatter 1 tbsp microgreens or chopped fresh herbs on top.

Serve

Optionally drizzle a few drops of olive oil. Close the bagel if desired or serve open-faced. Serve immediately while egg is warm so the yolk can mingle with the avocado (total eat time best within 5 minutes).
