Wash and peel the Russet potatoes. Cut them into even-sized strips, approximately 1/4 inch thick.

Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes them crispier when fried.

In a deep fryer or large heavy pot, heat the vegetable oil to 350°F (175°C).

Drain the soaked potatoes and pat them dry with paper towels to remove as much moisture as possible.
