Trim excess fat from each pork chop and, if they are thicker than 1/2 inch, butterfly or gently pound to an even thickness of about 1/2 inch. Pat dry with paper towels.

Prepare pork

Season both sides of each pork chop evenly with salt and black pepper (about 1/4 tsp each per chop). Let rest 5–10 minutes at room temperature while you set up the breading station.

Set up three shallow dishes: one with the all-purpose flour, one with the eggs beaten with milk, and one with the panko breadcrumbs. Lightly dredge each seasoned pork chop in flour, tapping off excess. Then dip into the egg mixture, letting excess drip off. Finally, press firmly into the panko breadcrumbs until evenly coated. Place breaded chops on a wire rack while you heat the oil.

Pour oil into a heavy skillet or deep frying pan to a depth of about 1/2 inch (roughly 1.5–2 cups depending on pan). Heat over medium-high heat until oil reaches 340–350°F (170–175°C). If you don't have a thermometer, test by dropping a few breadcrumbs into the oil; they should sizzle steadily and brown in about 30–45 seconds.

Working in batches if necessary, carefully place breaded pork chops into the hot oil. Fry 3–4 minutes per side, turning once, until golden brown and internal temperature reaches 145–150°F (63–66°C). Adjust heat as needed so the crust browns evenly without burning. Use tongs to transfer cooked tonkatsu to a wire rack or paper towel-lined plate to drain and rest for 2–3 minutes.

If using store-bought tonkatsu sauce, pour into a small bowl for serving. For a quick homemade version, whisk together 1/2 cup ketchup, 2 tbsp Worcestershire sauce, 1 tbsp soy sauce, 1 tbsp mirin or sugar, and 1 tsp Dijon mustard until smooth (this will yield about 3/4 cup).

Slice each rested pork cutlet into 4–6 strips. Arrange on plates over a bed of shredded cabbage. Serve with a lemon wedge, a small bowl of tonkatsu sauce for drizzling or dipping, and a scoop of hot cooked rice alongside.

Chill the white and sparkling wines to 45–50°F (7–10°C). Chill dessert wine slightly cooler if desired (50–54°F / 10–12°C). Bring the red wine to cool-room temperature (55–65°F / 13–18°C). Open the bottles 10–15 minutes before tasting to let them breathe; decant the Pinot Noir if it is young and tannic.

Chill and open wines

Pour 3–4 oz (90–120 ml) of each wine per guest into appropriate glasses: white in a tulip or white wine glass, red in a larger bowl-shaped glass, sparkling into a flute, dessert wine into a small dessert or port glass. Leave small space in each glass to swirl and smell.

Place a carafe or bottle of filtered water and small water glasses on the table for rinsing and palate-refreshing between wines.

Arrange the cheese, meat, fruit, crackers or bread, olives and nuts on a small tasting board. Label or note which small bites are intended to pair with which wine (e.g., goat cheese with Sauvignon Blanc; soft cheese or prosciutto with sparkling; hard cheese with Pinot Noir; dark chocolate with dessert wine).

Cut cheeses and fruit into thin, bite-sized slices so guests can sample without overwhelming the wine. Provide small plates and napkins.

Provide plain crackers or small pieces of crusty bread as neutral palate cleansers between pairings.

Begin with the sparkling wine, followed by the dry white, then the light red, and finish with the dessert wine. This order moves from lighter to richer/sweeter and avoids overpowering delicate wines.

For each wine: look (check clarity and color), swirl gently to release aromas, sniff 2–3 times, take a small sip and let it coat the mouth, note acidity, sweetness, tannin and finish. Take a small bite of the suggested accompaniment and observe how flavors change. Rinse palate with water or a plain cracker between wines.

Encourage tasting one accompaniment per wine initially, then experiment by mixing (e.g., cheese with fruit or meat with bread) to find preferred combinations. Take notes if desired.

If you opened more wine than needed, reseal and refrigerate white, sparkling and dessert wines; keep reds at cool-room temperature and re-cork. Most opened wines keep 2–5 days depending on type and storage.

For larger groups, scale the wine quantities: approximate consumption per guest for a structured tasting is 4–6 oz (120–180 ml) per wine style.
