Prep and oven
Preheat
Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven.
Line a baking sheet with parchment paper or foil for easier cleanup.
Prepare garlic butter
In a small bowl, combine the softened unsalted butter, minced garlic, chopped parsley, grated Parmesan (if using), salt, and black pepper. Mix thoroughly until smooth and evenly combined. Taste and adjust salt or garlic to preference.
Assemble bread
Slice each Costanzo's roll in half horizontally so you have 8 halves total. If rolls are very large, you can cut into 4 long halves instead.
Using a knife or offset spatula, spread about 3/4 tablespoon of the garlic butter mixture evenly over the cut surface of each roll half, covering to the edges.
Divide the shredded or sliced mozzarella evenly over the buttered halves (about 1/4 cup per half). Gently press the cheese so it adheres to the butter.
If using, lightly sprinkle dried oregano or Italian seasoning over the cheese and a pinch of red pepper flakes for a touch of heat.
Bake and finish
Place the prepared roll halves on the lined baking sheet, cut-side up. Bake in the preheated oven for 8–12 minutes, until the cheese is fully melted and the edges of the bread are warmed through.
For a golden-brown, bubbling top, switch the oven to broil on high for 1–2 minutes—watch closely to prevent burning. Remove from oven when cheese is bubbly and slightly browned.
Let the garlic bread rest on the baking sheet for 1–2 minutes, then transfer to a cutting board. If desired, trim into portions and serve warm.
