Melt the Chocolate
In a heatproof bowl, combine dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.
Whisk the Egg Yolks
In a separate bowl, whisk the egg yolks and granulated sugar until pale and fluffy. Gradually add the melted chocolate mixture and mix until well combined.
Whip the Cream
In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the chocolate mixture until combined.
Chill the Mousse
Spoon the mousse into serving dishes or cups. Refrigerate for at least 2 hours, or until set.
Serve
Serve chilled, optionally garnished with chocolate shavings or whipped cream.
