Prepare lettuce

Rinse the lettuce under cold water, shake off excess moisture or spin in a salad spinner, then shred or chop into bite-sized pieces until you have about 4 cups. Pat dry with paper towels if necessary.

Prepare tomatoes

Wash tomatoes, remove core, then slice or dice to yield about 2 cups. If using very juicy tomatoes, drain briefly on paper towels to avoid soggy toppings.

Prepare onions

Peel the red onion and cut into very thin slices. Separate rings and measure out 1/2 cup. If raw onion is too sharp, soak slices in cold water for 5 minutes, then drain and pat dry.

Prepare pickles and peppers

Drain dill pickle slices and pat lightly with paper towel. Slice pickles into halves or quarters if large. Drain banana peppers and cherry peppers from their jars and slice to measure the indicated amounts. Keep pickled items separate from fresh lettuce until assembly to maintain crispness.

Slice mushrooms and peppers

Wipe mushrooms with a damp cloth or quickly rinse and pat dry, then slice to yield about 1 cup. Core and seed the sweet bell pepper, then slice into thin strips to yield 3/4 cup.

Sauté mushrooms and sweet peppers

Heat 1 tablespoon olive oil in a medium skillet over medium-high heat until shimmering. Add sliced mushrooms and sweet peppers in a single layer if possible. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Sauté, stirring occasionally, 5–7 minutes until mushrooms are golden and peppers are softened but still slightly crisp. Taste and adjust seasoning. Remove from heat and let cool slightly before assembly.

Tossing and assembling

In a large bowl or on sandwich/salad assembly surface, arrange the shredded lettuce as the base. Evenly distribute the tomatoes and red onion over the lettuce. Add the sautéed mushrooms and sweet peppers on top. Scatter the pickle slices, banana peppers, and cherry peppers across the top so flavors are balanced.

Optional finish

If desired, sprinkle 1 tablespoon chopped parsley or basil over the toppings and drizzle 1 teaspoon fresh lemon juice or red wine vinegar to brighten flavors. Serve immediately so lettuce stays crisp.
