The dark concentrated fruit was cold soaked for four days and aged for 15 months in 35% new French oak. This wine has aromas of warm oak spices, followed by pomegranate, black plum, chestnut, sage and chamomile.

Harvest the Pinot Noir grapes and place them in a fermentation vessel. Add cold water to cover the grapes and allow them to soak for 4 days at a temperature of 10-12°C (50-54°F).

Cold Soaking

After cold soaking, drain the liquid and add sugar and yeast to initiate fermentation. Maintain the fermentation temperature between 20-25°C (68-77°F) for about 10-14 days.

Fermentation

Once fermentation is complete, press the grapes to separate the liquid wine from the solids.

Pressing

Transfer the wine to new French oak barrels (35% new) for aging. Allow the wine to age for 15 months, monitoring the flavor development.

Aging

After aging, taste the wine and add sulfites as needed. Bottle the wine and ensure proper sealing.
