Sort through the Rkatsiteli grapes, removing any damaged or unripe grapes. Wash them thoroughly.

Prepare the Grapes

Using a grape crusher or your hands, crush the grapes to release their juice into a clean fermenting container.

Add 250 ml of water and 20 grams of sugar to the crushed grape mixture. Stir to dissolve the sugar.

Sprinkle 5 grams of wine yeast and 1 gram of tannins over the mixture. Stir gently to combine.

Cover the fermenting container with a clean cloth and allow it to sit in a dark, warm place for 7-10 days, stirring daily.

Fermentation

After fermentation, press the mixture to separate the liquid from the solids. Use a wine press or a clean cloth to squeeze out as much juice as possible.

Transfer the juice to a clean fermentation vessel, seal it with an airlock, and let it ferment for an additional 2-3 weeks.

Secondary Fermentation

Once fermentation is complete, siphon the wine into clean bottles, leaving space at the top. Seal with corks.

Bottling

Store the bottles in a cool, dark place for at least 3-6 months before tasting.
