Black cherry, dried herb and hints of espresso and mocha on the nose. Very refined on the palate, with generous fine grain tannins and a dense, savory mid palate that leads to a long, pleasing finish.

Hand pick ripe Cabernet Sauvignon grapes from the vineyard, ensuring only the best quality grapes are selected.

Harvesting

Carefully destem the grapes to separate the fruit from the stems, minimizing tannin extraction from the stems.

Destemming

Gently crush the destemmed grapes to release the juice while keeping the skins intact.

Crushing

Ferment the crushed grapes for three weeks on the skins, allowing for extraction of color, tannins, and flavor.

Fermentation

After fermentation, press the wine to separate the liquid from the skins.

Pressing

Age the wine in new American oak barrels for 20 months, allowing the wine to develop complex flavors of black cherry, herbs, espresso, and mocha.

Barrel Aging

Once aging is complete, filter and bottle the wine. If desired, add a small amount of sulfites for preservation.

Bottling

Let the wine breathe before serving. Pair with savory dishes or enjoy on its own to savor the complex flavors.
