For Szechuan Dry Rub with Hot Honey Glaze
Prepare the Chicken
Preheat the oven to 400°F (200°C). Rinse and pat dry the chicken drummies.
Make the Dry Rub
In a bowl, combine Szechuan peppercorns, paprika, garlic powder, onion powder, salt, and black pepper.
Season the Chicken
Rub the spice mixture generously over the chicken drummies.
Bake the Chicken
Place the drummies on a baking sheet and bake for 30-35 minutes until cooked through.
Prepare the Hot Honey Glaze
In a small saucepan, heat honey and chili flakes over low heat until warm.
For Vinegar Dry Rub with Pickle Sauce
Prepare the Chicken
Preheat the oven to 400°F (200°C). Rinse and pat dry the chicken drummies.
Make the Dry Rub
In a bowl, combine garlic powder, onion powder, salt, and black pepper.
Season the Chicken
Rub the dry mixture generously over the chicken drummies.
Marinate the Chicken
In a separate bowl, mix vinegar and pickle juice. Let the drummies marinate in this mixture for at least 30 minutes.
Bake the Chicken
Place the marinated drummies on a baking sheet and bake for 30-35 minutes until cooked through.
Prepare the Pickle Sauce
Serve the baked drummies with pickle juice on the side for dipping.
