Puff Pastry Layers
Prepare and bake
Preheat oven to 400°F (200°C). Line two baking sheets with parchment. Unfold the thawed puff pastry sheet on a lightly floured surface and gently roll to about 12 x 10 inches to even thickness. Brush surface lightly with melted butter and evenly sprinkle the 3 tbs dark brown sugar and 1 tbs coarse sugar over the top. Place a second sheet of parchment over pastry and roll gently to press sugar in. Using a sharp knife or bench scraper, trim edges and cut pastry into nine equal rectangles (about 3.5 x 3.3 in) for individual mille-feuille components. Transfer rectangles to the prepared sheets, prick each lightly with a fork to discourage excessive rising, and bake for 12–16 minutes, rotating halfway, until golden-brown and puffed. Remove and let cool on racks. If layers are domed, press between two flat pans with a towel for 5 minutes to flatten slightly.
Rhubarb-Strawberry Syrup
Combine 1 cup chopped rhubarb, 1 cup quartered strawberries, 1 tbs sugar and 60 ml water in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until rhubarb is softened and fruit breaks down (6–8 minutes). Mash lightly with a fork or use an immersion blender briefly for a smoother syrup, then stir in 1 tsp lemon juice. Simmer 1–2 more minutes until slightly thickened. Strain through a fine mesh sieve into a bowl, pressing solids to extract syrup. Reserve syrup and discard solids or reserve a tablespoon for assembly. Let cool to room temperature.
Ginger Diplomat Cream
Make pastry cream base
In a medium saucepan, heat 1 cup whole milk with 1 tsp freshly grated ginger over medium heat until it just begins to steam (do not boil). In a bowl, whisk together 3 tbs granulated sugar, 3 egg yolks and 2 tsp cornstarch until smooth and pale. Temper the egg mixture by slowly whisking in about 1/3 of the hot milk, then pour the tempered mixture back into the saucepan. Cook over medium-low heat, stirring constantly, until the mixture thickens to a custard that coats the back of a spoon (about 3–5 minutes). Remove from heat and stir in 1 tsp vanilla extract and 1 tsp softened butter. Transfer to a bowl, cover surface with plastic wrap to prevent a skin, and chill until cold, about 1–2 hours.
Finish diplomat
Once the pastry cream is chilled, whip 3 tbs cold heavy cream with 1 tsp powdered sugar to soft peaks. Gently fold the whipped cream into the chilled ginger pastry cream to make a light diplomat cream. Keep chilled until assembly.
Candied Almonds
Line a small baking sheet with parchment. In a small nonstick skillet, combine 2 tbs granulated sugar and 1 tsp water over medium heat. When sugar dissolves and begins to bubble and color, add 3 tbs slivered almonds and a pinch of sea salt, tossing to coat. Continue to cook, stirring frequently, until almonds are glazed and golden (1–2 minutes). Immediately pour onto prepared parchment and spread into a single layer; separate as needed with a fork. Let cool and roughly chop for garnish.
Fresh Berries & Assembly
Prepare strawberries: toss 2 cups sliced strawberries with 1–2 tbs of the reserved rhubarb-strawberry syrup to macerate briefly (5–10 minutes). This adds moisture and flavor but avoid making berries soggy.
Assemble mille-feuille: place one baked puff pastry rectangle on a serving tray. Spoon or pipe about 1.5 tbs of ginger diplomat cream onto the pastry in an even layer. Drizzle about 1 tsp rhubarb-strawberry syrup over the cream. Arrange a few macerated strawberry slices on top (about 3–4 slices depending on size). Sprinkle a few chopped candied almonds. Top with a second pastry rectangle, repeat with 1.5 tbs diplomat cream, syrup, strawberries and almonds. Finish with a third pastry rectangle. On the top layer, dust lightly with 1 tsp powdered sugar and finish with remaining chopped candied almonds and a small mint leaf or microgreen. Repeat to make 3–4 individual mille-feuille desserts (quantity depends on rectangle count).
Serve immediately or chill up to 1 hour. Note: puff pastry will soften over time from cream; assemble close to service for best texture.
