Demerara–Maple Syrup

Make syrup (can be done ahead)

Combine Demerara sugar and hot water in a small heatproof container. Stir until the sugar is mostly dissolved. Add the maple syrup and stir until fully incorporated. Let cool. Store in a sealed jar in the refrigerator for up to 2 weeks. Yields approx. 6 ounces; use 1/2 oz per cocktail.

Cocktail Assembly

Chill an old-fashioned glass by filling it with ice and setting it aside while you build the drink.

In a mixing glass, add 2 oz Old Forester 100, 1/2 oz Demerara–maple syrup, and 3 dashes Angostura bitters.

Fill the mixing glass with ice and stir briskly for about 20–30 seconds (roughly 20–30 full turns) until the mixture is well chilled and slightly diluted.

Dump the ice from the chilled old-fashioned glass and place one large ice cube (or fresh ice) into it.

Strain the stirred cocktail into the prepared glass over the large ice cube.

Express the oils of an orange peel over the drink by holding the peel skin-side down above the glass and giving it a sharp squeeze, then rub the peel around the rim and drop it into the glass as garnish.

Serve immediately.
