Preparation
Prepare the Oysters
Carefully rinse the oysters under cold running water to remove any sand or debris. Use a brush if necessary to scrub the shells gently.
Shuck the Oysters
Using an oyster knife, gently slide the knife into the hinge of the oyster shell. Twist the knife to pop the shell open. Slide the knife along the inside of the shell to detach the oyster from the shell and carefully remove the top shell.
Serving
Arrange the Oysters
Place the freshly shucked oysters on a platter filled with crushed ice to keep them chilled and presentable.
Garnish
Arrange lemon wedges around the oysters and place a small bowl of mignonette sauce and a bottle of hot sauce on the side for dipping.
Serve
Serve the oysters immediately while they are fresh and chilled. Encourage guests to squeeze lemon juice over the oysters or add mignonette sauce or hot sauce to their preference.
