Method
Dough Preparation
Activate Yeast
In a small bowl, combine warm water, yeast, and sugar. Stir gently and let it sit for about 5-10 minutes until frothy.
Mix Dough
In a large mixing bowl, combine flour and salt. Pour in the activated yeast mixture and stir until a dough forms.
Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.
Shaping and Baking
Preheat Oven
Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
Shape Pretzel Sticks
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, about 12-14 inches in length, and twist into a pretzel shape or leave as sticks.
Prepare Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add the baking soda. Reduce heat to a simmer.
Boil Pretzels
Carefully place each pretzel stick in the baking soda bath for about 30 seconds, turning halfway through. Remove with a slotted spoon and place on the prepared baking sheet.
Egg Wash and Sprinkle Salt
In a small bowl, beat the egg yolk with 1 tablespoon of water. Brush the egg wash over the pretzel sticks and sprinkle with coarse sea salt.
Bake
Bake the pretzel sticks in the preheated oven for 12-15 minutes or until golden brown.
IPA Mustard Preparation
Mix Ingredients
In a small bowl, combine yellow mustard, IPA beer, honey, apple cider vinegar, and garlic powder. Mix well until smooth.
Serving
Serve
Allow the pretzel sticks to cool slightly before serving with the IPA mustard on the side.
