Prepare the Tzatziki

In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt. Mix well until smooth. Adjust seasoning with black pepper and add chopped dill. Refrigerate for at least 30 minutes to allow flavors to meld.

Cook the Shishito Peppers

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the shishito peppers and cook for about 5-7 minutes, stirring occasionally, until they are blistered and tender.

Prepare the Onion

While the peppers are cooking, thinly slice the red onion. In a separate bowl, toss the sliced onion with the remaining olive oil, red wine vinegar, salt, and black pepper. Let it marinate for about 10 minutes.

Toast the Almonds

In a small pan, toast the sliced almonds over low heat until they are golden brown, about 3-4 minutes. Stir frequently to avoid burning.

Serve

On a platter, arrange the blistered shishito peppers, marinated red onions, and dollops of tzatziki. Sprinkle the toasted almonds on top and garnish with additional dill if desired.
