Roast the Eggplant

Preheat your grill or oven to high heat. Prick the eggplant several times with a fork to allow steam to escape. Grill or roast the eggplant for about 30-40 minutes, turning occasionally, until the skin is charred and the flesh is soft.

Prepare the Dip

Once the eggplant is cool enough to handle, scoop the flesh into a food processor. Add black sesame seeds, olive oil, garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy.

Serve

Transfer the eggplant dip to a serving bowl. Drizzle with additional olive oil and sprinkle with extra black sesame seeds if desired. Serve with an assortment of crudités.
