Pudding

Method

Preparation

  1. 1

    Prepare the Dates

In a bowl, combine the chopped dates and boiling water. Let it sit for 15 minutes to soften the dates.

  2. 2

    Make the Batter

In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  3. 3

    Combine Wet and Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined. Fold in the softened dates along with any remaining liquid.

  4. 4

    Bake the Pudding

Preheat your oven to 180°C (350°F). Pour the mixture into a greased pudding dish and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  5. 5

    Prepare the Toffee Sauce

In a saucepan, combine 100g of brown sugar, 100ml of heavy cream, and 50g of unsalted butter. Heat gently until the sugar dissolves and the mixture thickens slightly.

  6. 6

    Serve

Once the pudding is baked, let it cool slightly before pouring the toffee sauce over the top. Serve warm with custard.
