1. Prepare the Chips
Preheat the oven to 425°F (220°C). Peel and cut the potatoes into thick chips. Place them in a bowl and toss with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
2. Bake the Chips
Bake the chips in the preheated oven for 25-30 minutes, flipping halfway through, or until golden brown and crispy.
3. Cook the Steak
While the chips are baking, heat a skillet over medium-high heat. Season the sirloin steak with salt and pepper. Add a little olive oil to the pan and sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.
4. Prepare the Salad
In a bowl, combine mixed salad greens, halved cherry tomatoes, and sliced cucumber. Drizzle with balsamic vinaigrette and toss to combine.
