Prepare the Pork Belly
Score the skin of the pork belly in a crosshatch pattern. Be careful not to cut into the meat.

Season the Pork Belly
Rub the pork belly all over with salt, black pepper, brown sugar, garlic powder, onion powder, and paprika. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.

Preheat the Oven
Preheat your oven to 300°F (150°C).

Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium heat. Add the pork belly skin-side down and sear for about 5-7 minutes until the skin is crispy.

Roast the Pork Belly
Flip the pork belly over and add apple cider vinegar and water to the skillet. Cover with a lid or foil and roast in the oven for 2.5 to 3 hours until tender.

Crisp the Skin
Remove the lid or foil and increase the oven temperature to 400°F (200°C). Roast for an additional 20-30 minutes until the skin is crispy.

Allow the pork belly to rest for 10-15 minutes before slicing. Serve as desired.
