Fry the Chips
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the chips in batches and fry for about 5-7 minutes until they are golden and crispy. Remove and drain on paper towels, seasoning with salt.

Make the Batter
In a bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until you have a smooth batter.

Prepare the Fish
Pat the fish fillets dry with paper towels, then dip them into the batter, ensuring they are fully coated.

Fry the Fish
In the same hot oil used for the chips, carefully add the battered fish and fry for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Make the Tartar Sauce
In a bowl, mix together mayonnaise, chopped pickles, lemon juice, and capers (if using) until well combined.

Serve the crispy fish with the hot chips and a side of tartar sauce for dipping.
