Prepare the Bread
Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices and arrange them on a baking sheet. Brush both sides of the slices with olive oil.

Toast the Bread
Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until golden brown and crispy. Remove from oven and let cool slightly.

Prepare the Topping
While the bread is toasting, dice the fresh tomatoes and chop the basil leaves. In a bowl, combine the diced tomatoes, chopped basil, balsamic vinegar, salt, and black pepper. Mix well and set aside.

Assemble the Bruschetta
Slice the fresh mozzarella into thin rounds. Top each toasted bread slice with a spoonful of the tomato and basil mixture, followed by a slice of mozzarella.

Serve
Drizzle a little extra olive oil over the assembled bruschetta and serve immediately while the bread is still warm.
