Method
Cheese Enchiladas

Prepare Enchiladas
Preheat your oven to 350°F (175°C). In a skillet, heat olive oil over medium heat. Soften the corn tortillas in the oil for about 30 seconds on each side. Remove and fill each tortilla with shredded cheese, then roll them up and place seam-side down in a baking dish.

Add Sauce
Pour the enchilada sauce over the rolled tortillas, making sure to cover them completely. Sprinkle additional cheese on top if desired.

Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and slightly golden.
Tacos

Cook Meat
In a skillet, brown the ground beef or chicken over medium heat. Drain excess fat and add taco seasoning, mixing well. Add a little water if needed to help mix.

Assemble Tacos
Fill taco shells with the seasoned meat, then top with shredded lettuce, diced tomatoes, and a dollop of sour cream.
Smothered Green Chile Rellenos

Roast Peppers
Roast the poblano peppers over an open flame or in the oven until skin is charred. Place in a plastic bag for 10 minutes to steam, then peel and remove seeds.

Stuff Peppers
Stuff each pepper with shredded cheese. Beat eggs with milk and pour over stuffed peppers in a baking dish. Drizzle green chile sauce on top.

Bake
Bake at 375°F (190°C) for 25-30 minutes until the egg is set and cheese is melted.
Chili with Meat

Cook Meat
In a large pot, brown the ground beef over medium heat. Drain excess fat.

Add Ingredients
Add diced tomatoes, kidney beans, chili powder, diced onion, and minced garlic. Stir to combine.

Simmer
Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.
Rice and Beans

Cook Rice
In a saucepan, combine white rice and water. Bring to a boil, then cover and reduce heat. Let simmer for 15 minutes or until rice is tender.

Prepare Beans
Heat the canned black beans in a small saucepan over medium heat, adding salt to taste.
Chips & Salsa

Serve Chips & Salsa
Open the bag of tortilla chips and serve with a bowl of salsa on the side.
Sopapillas

Mix Dough
In a bowl, combine all-purpose flour, baking powder, and salt. Gradually add warm water until a dough forms. Knead for a few minutes until smooth.

Roll Out and Cut
Roll out the dough on a floured surface to about 1/4 inch thick and cut into squares.

Fry
In a deep frying pan, heat vegetable oil. Fry the squares until golden brown, about 2 minutes on each side. Drain on paper towels.
