Preparing the Sopaipilla Dough

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until evenly mixed.

Add Wet Ingredients
Add the vegetable oil and warm water to the dry mixture. Stir until a dough begins to form.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Cover with a kitchen towel and let it rest for 30 minutes.

Add Protein or Beans
Add your choice of ground beef, ground chicken, or refried beans to the skillet. Stir in cumin, chili powder, salt, and pepper. Cook until the meat is browned and fully cooked, about 7-10 minutes. Remove from heat and set aside.
Frying Sopaipillas

Roll Out the Dough
After resting, roll out the dough on a floured surface to about 1/4 inch thick. Cut into circles or squares, about 4-5 inches in diameter.

Heat Oil for Frying
In a large pot or deep fryer, heat oil to 375°F (190°C).

Fry the Sopaipillas
Carefully drop the dough pieces into the hot oil. Fry until they puff up and turn golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
Assembling the Plate

Stuff the Sopaipillas
Once the sopaipillas are cool enough to handle, gently open them on one side and fill with the cooked filling of your choice.

Top with Chile
Pour your choice of red or green chile sauce over the stuffed sopaipillas.
