Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tsp of baking powder, 1 tsp of salt, and 1 tbs of sugar. Whisk together until well combined.

Add Water
Make a well in the center of the dry ingredients and add 3 tbs of warm water. Mix with your hands or a wooden spoon until a shaggy dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.

Rest the Dough
Wrap the kneaded dough in plastic wrap or cover it with a clean kitchen towel. Let it rest for at least 30 minutes.

Heat Oil
In a deep skillet or frying pan, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Roll Out Dough
Once the dough has rested, divide it into 8 equal pieces. Roll each piece out on a lightly floured surface into a circle about 1/8 inch thick.

Fry Sopapillas
Carefully place the rolled dough into the hot oil. Fry until golden brown, about 2-3 minutes on each side. Use a slotted spoon to remove them and drain on paper towels.
