Shredded Beef Enchiladas Recipe

    Prepare the Beef

    In a large pot, add the beef chuck roast, chopped onion, minced garlic, ground cumin, chili powder, salt, pepper, and beef broth. Bring to a boil over medium-high heat.

    Cook the Beef

    Once boiling, reduce the heat to low, cover, and simmer for about 2.5 to 3 hours until the beef is tender and easily shreds with a fork.

    Shred the Beef

    Remove the beef from the pot and let it cool slightly. Shred the beef using two forks and return it to the pot to mix with the juices.

Assemble the Enchiladas

    Prep the Oven

    Preheat your oven to 375°F (190°C).

    Prepare Tortillas

    In a skillet, lightly warm each corn tortilla for about 15 seconds on each side to make them pliable.

    Fill the Tortillas

    Place a generous amount of shredded beef filling in the center of each tortilla, then roll them tightly and place seam-side down in a greased baking dish.

Top and Bake

    Add Sauce and Cheese

    Pour the red or green chile sauce evenly over the rolled enchiladas. Sprinkle the shredded cheddar cheese on top.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
