Method

Cheese Mixture Preparation

  1. 1

    Sauté Chorizo

In a medium skillet, heat olive oil over medium heat. Add the chopped chorizo and cook until browned and crispy, about 5-7 minutes. Remove from heat and set aside.

  2. 2

    Combine Cheeses

In a mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and Queso Blanco. Add the sautéed chorizo and diced jalapeños to the cheese mixture and stir until well combined.

Cooking

  1. 3

    Melt the Cheese

Preheat your oven to 350°F (175°C). Transfer the cheese mixture to an oven-safe skillet or baking dish. Spread it out evenly.

  2. 4

    Bake

Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serving

  1. 5

    Warm the Tortillas

While the cheese is baking, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side, or until soft and pliable.

  2. 6

    Serve

Once the cheese is melted, remove it from the oven and serve immediately with warm tortillas for dipping.
