Prepare the Protein

Cook the Ground Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.

Add Taco Seasoning
Once the beef is browned, drain excess fat if necessary. Stir in the taco seasoning and follow the package instructions, typically adding a bit of water, and simmer for about 5 minutes.
Cook the Rice

Rinse the Rice
In a fine mesh strainer, rinse the rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and water is absorbed.
Prepare the Beans

Heat the Black Beans
In a small saucepan, combine the canned black beans (drained and rinsed), cumin, garlic powder, and salt. Heat over medium heat until warm, stirring occasionally, about 5-7 minutes.
Assemble the Tacos

Warm the Tortillas
In a dry skillet over medium heat, warm each corn tortilla for about 30 seconds on each side until pliable.

On each tortilla, add a portion of the cooked ground beef, then top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
