Soak the Potato Slices
Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and makes the chips crispier.

Dry the Potato Slices
After soaking, drain the potato slices and pat them dry using paper towels. Make sure they are as dry as possible to avoid oil splatters during frying.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Working in batches, carefully add a handful of potato slices to the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Avoid overcrowding the pot to maintain the oil temperature.
