Prepare Dough

    Mix Ingredients

    In a large bowl, combine the masa harina and salt. Gradually add warm water while mixing until a soft dough forms. Knead the dough for about 2-3 minutes until smooth.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for about 15-20 minutes.

Prepare Fillings

    Cook Ground Beef

    In a skillet over medium heat, add the ground beef and chopped onions. Cook until the beef is browned and the onions are translucent. Drain excess fat and stir in taco seasoning. Remove from heat.

    Prepare Chicken Filling

    In a separate bowl, combine shredded chicken, cilantro, and half of the cheese. Mix well.

    Prepare Bean Filling

    In another bowl, mix the refried beans with a little water to make them spreadable. You can add spices if desired.

Cook Gorditas

    Shape Gorditas

    Divide the rested dough into 6 equal pieces. Roll each piece into a ball, then flatten into a disc about 1/2 inch thick.

    Fry Gorditas

    In a large skillet, heat the oil over medium heat. Fry each gordita for 2-3 minutes on each side until golden brown and cooked through.

    Fill Gorditas

    Once cooked, carefully slice each gordita to create a pocket. Stuff with your choice of ground beef, chicken, or beans, then top with the remaining cheese.
