Marinating the Chicken or Beef

Prepare the Marinade
In a bowl, mix olive oil, lime juice, garlic powder, chili powder, cumin, salt, and black pepper together.

Marinate the Meat
Place the chicken or beef in a resealable plastic bag or shallow dish and pour the marinade over the meat. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes (up to 4 hours for better flavor).

Slice the Vegetables
While the meat is marinating, slice the bell peppers and onion into thin strips. Dice the tomatoes. Set aside.

Prepare the Lettuce
Wash and dry the green lettuce leaves. Tear them into bite-sized pieces and place them in a large serving bowl.
Cooking the Meat and Assembling the Salad

Grill the Meat
Preheat a grill or grill pan over medium-high heat. Remove the meat from the marinade and grill for 6-7 minutes on each side (or until cooked through). Once done, let it rest for a few minutes before slicing it into strips.

Assemble the Salad
On top of the bed of lettuce, layer the grilled meat, grilled vegetables, diced tomatoes, and then sprinkle the shredded cheddar cheese. Serve with guacamole and sour cream on the side.
