Filling Preparation

    Cook the Meat

    In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.

    Add Aromatics

    Add chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.

    Season the Mixture

    Stir in cumin, chili powder, salt, and black pepper. Cook for an additional 2 minutes, allowing the spices to bloom.

Assembly

    Prepare Tortillas

    Warm the corn tortillas in a skillet or microwave until pliable, about 30 seconds.

    Fill the Tortillas

    Take a warmed tortilla, place about 2-3 tablespoons of the meat mixture in the center, then roll it up tightly. Repeat with remaining tortillas.

Baking and Serving

    Assemble in Baking Dish

    Preheat the oven to 180°C (350°F). Spread 1 cup of enchilada sauce at the bottom of a baking dish. Place the rolled enchiladas seam-side down in the dish.

    Top with Sauce and Cheese

    Pour the remaining enchilada sauce over the top of the enchiladas, then sprinkle with shredded cheese.

    Bake

    Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.

    Garnish and Serve

    Remove from the oven and garnish with chopped cilantro. Serve hot with a dollop of sour cream on the side.
