Cheese Enchiladas

Fill and Roll
Place a small amount of shredded cheese (about 2 tablespoons) in the center of each tortilla, roll them up tightly, and place them seam-side down in a greased baking dish.

Add Sauce
Pour the enchilada sauce evenly over the rolled tortillas, then sprinkle the remaining cheese on top.

Bake
Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.

Cook the Filling
In a skillet over medium heat, cook the ground beef or shredded chicken until fully cooked. Drain excess fat if necessary.

Season the Meat
Add taco seasoning to the meat and follow package instructions, usually adding water and simmering for about 5 minutes.

Assemble the Tacos
Fill each taco shell with the seasoned meat, then top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.

Cook the Rice
In a pot, boil 4 cups of water. Add the white rice, reduce heat to low, cover, and simmer for about 18-20 minutes until tender.

Prepare the Beans
If using canned beans, rinse and heat them in a saucepan over medium heat. If using dried beans, cook according to package instructions.

Serve Chips & Salsa
Place tortilla chips in a bowl and serve with a side of salsa for dipping.
