Prepare the Churro Dough

Boil Water Mixture
In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.

Add Flour
Once the mixture is boiling, remove it from heat and quickly stir in the all-purpose flour until it forms a ball of dough.

Incorporate Eggs
Allow the dough to cool for a few minutes. Then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.
Prepare Cinnamon Sugar Coating

Mix Sugar and Cinnamon
In a small bowl, combine the granulated sugar and ground cinnamon. Set aside for later use.
Fry the Churros

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe Churros
Transfer the churro dough to a piping bag fitted with a star tip. Carefully pipe 4-6 inch long strips of dough into the hot oil, cutting them with scissors.

Fry Until Golden Brown
Fry the churros for about 2-3 minutes on each side, or until they are golden brown and crispy.
