For Chicken Chimichanga

    Prepare the Filling

    In a bowl, combine the shredded chicken, refried beans, shredded cheese, chili powder, cumin, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly combined.

    Assemble the Chimichangas

    Lay out a tortilla on a flat surface. Place about 1/4 of the chicken mixture in the center of the tortilla. Fold the sides over the filling, then roll the tortilla from the bottom up to enclose the filling. Repeat with remaining tortillas and filling.

    Fry the Chimichangas

    In a deep skillet, heat the olive oil over medium heat. Once the oil is hot, carefully place the rolled chimichangas seam-side down into the oil. Fry until golden brown, about 3-4 minutes per side. Remove from oil and drain on paper towels.
