Cheese Enchiladas Recipe
Twelve rolled cheese enchiladas, smothered in Red or Hatch Green Chile. Topped with melted cheddar and Monterrey jack cheese.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Fill the Tortillas
Take a fried tortilla and add a generous amount of cheddar and Monterey Jack cheese (about 1/4 cup) in the center. Roll it tightly and place it seam side down in a greased 9x13 inch baking dish.

Repeat
Repeat the filling and rolling process for the remaining tortillas and cheese.
Baking

Add Sauce and Cheese
Once all enchiladas are in the baking dish, pour the prepared Chile sauce over the top of the enchiladas. Then sprinkle the remaining cheddar and Monterey Jack cheese on top.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Serving

Garnish and Serve
Once out of the oven, let the enchiladas sit for a few minutes. Serve hot, topped with sour cream, chopped cilantro, and sliced jalapeños.
