Prepare the Marinade

    Marinate the Beef

    In a bowl, mix the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the Angus beef flank steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.

Cook the Beef

    Grill the Steak

    Preheat the grill to medium-high heat. Remove the marinated beef from the refrigerator and let it sit at room temperature for about 15 minutes. Grill the steak for about 6-8 minutes per side, or until it reaches your desired level of doneness. Once done, remove the steak from the grill and let it rest for 10 minutes before slicing.

    Make the Guacamole

    While the steak is grilling, prepare the guacamole. In a bowl, mash the ripe avocados. Add lime juice, garlic powder, and salt. Mix until smooth. Fold in the diced tomatoes and chopped cilantro. Set aside.

Assemble the Tacos

    Serve the Tacos

    Once the steak has rested, slice it against the grain into thin strips. Warm the corn tortillas on the grill for about 30 seconds on each side. To assemble, place a few strips of grilled carne asada on each tortilla. Top with diced onions and chopped cilantro. Serve with a generous scoop of guacamole on the side.
