Nachos

Prepare the Nachos
Preheat your oven to 350°F (175°C). Spread the tortilla chips on a baking sheet.

Add Beans and Meat
Spread the refried beans over the chips evenly, then add the carne asada on top.

Add Cheese
Sprinkle the Monterrey jack cheese and cheddar cheese generously over the top.

Bake
Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
Mini Chicken Chimichangas

Prepare the Filling
In a bowl, mix the shredded cooked chicken with the Monterrey jack cheese.

Assemble the Chimichangas
Place about 1/2 cup of the filling in the center of each flour tortilla, fold in the sides, and roll it up tightly.

Fry the Chimichangas
Heat the vegetable oil in a deep skillet over medium heat. Fry each chimichanga until golden brown, about 3–4 minutes per side.

Drain
Remove the chimichangas from the oil and drain on paper towels.
Quesadilla

Add Cheese and Chilies
Sprinkle cheddar cheese and diced hatch green chilies on one half of the tortilla.

Cook
Fold the tortilla in half and cook for about 3-4 minutes on each side until the cheese is melted and the tortilla is golden brown.

Slice
Remove from heat and slice into wedges.
Chicken Flautas

Prepare the Filling
In a bowl, mix the shredded cooked chicken. Set aside.

Assemble Flautas
Place about 1/2 cup of the chicken filling on one end of each corn tortilla, roll them tightly, and secure with a toothpick.

Fry the Flautas
Heat the vegetable oil in a skillet over medium heat. Fry each flauta until golden brown and crispy, about 3–4 minutes per side.

Remove from oil and drain on paper towels.
Serving Dipping Sauces

In small bowls, serve sour cream and guacamole alongside the appetizer sampler.
