Mexican Lager 5.3%. Smooth. Crisp. Delicious.

Heat 3 gallons of filtered water to about 165°F (74°C). Add the Pilsner and Carapils malts to the water and maintain a mash temperature of 150°F (65°C) for 60 minutes.

Mash the Grains

After 60 minutes, sparge the grains with an additional 2 gallons of hot water (170°F/77°C) to extract sugars.

Sparging

Bring the wort to a boil. Once boiling, add the Saaz hops and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add the Hallertau hops to the wort.

Add Finishing Hops

After the boil, cool the wort down to around 65°F (18°C) using a wort chiller.

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the German lager yeast.

Pitch Yeast

Seal the fermentation vessel and allow the lager to ferment at 50°F (10°C) for 2 weeks.

Primary Fermentation

After fermentation, dissolve 3 oz of corn sugar in 2 cups of boiling water to create a priming solution.

Prepare for Bottling

Add the priming solution to the bottling bucket and transfer the lager into bottles, leaving about 1 inch of headspace.

Bottle the Lager

Cap the bottles and store them at room temperature for 1-2 weeks to carbonate.
