In a large pot, heat 5 gallons of water to approximately 160°F (71°C). Add the Pilsner, Munich, and caramel malts, stirring well to combine. Maintain the temperature and let it steep for 60 minutes.

Prepare the Wort

After steeping, remove the grains and bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. In the last 15 minutes of boiling, add the Saaz hops and honey.

Boil the Wort

Cool the wort quickly using a wort chiller or an ice bath to around 65°F (18°C). Transfer to a sanitized fermenter and pitch the lager yeast. Seal with an airlock and ferment for 2-3 weeks at 50°F (10°C).

Cool and Ferment

In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until foamy. In a large mixing bowl, mix the flour and salt together. Add the yeast mixture and mix until a dough forms.

Make the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat your oven to 450°F (232°C). After the dough has risen, punch it down and divide it into 8 pieces. Roll each piece into a long rope and shape it into a pretzel.

Shape the Pretzels

In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Boil each pretzel for about 30 seconds, then transfer to a baking sheet lined with parchment paper.

Prepare the Baking Soda Bath

Brush each pretzel with the beaten egg for a golden finish, and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes or until golden brown.

Bake the Pretzels

Let the pretzels cool slightly before serving. Pair the warm pretzels with your freshly brewed beer for a perfect combination!
