OLD FASHIONED

Premium amber lager for your enjoyment, as a tribute to your good taste.

In a large pot, bring 20 liters of water to a temperature of 65°C (149°F). Add the pale malt and caramel malt to the pot, stirring well to combine.

Prepare the Mash

Maintain the mash temperature at 65°C (149°F) for 60 minutes. Stir occasionally to ensure even temperature distribution.

Mashing

After mashing, sparge the grains with an additional 10 liters of water at 75°C (167°F) to extract sugars. Collect the wort in a fermentation vessel.

Sparging

Bring the collected wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. Add Saaz hops in the last 15 minutes of the boil.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath to a temperature below 20°C (68°F).

Cooling the Wort

Transfer the cooled wort to a fermentation vessel and pitch the lager yeast. Seal the vessel and allow it to ferment at a temperature of around 10°C (50°F) for about 2 weeks.

Fermentation

After fermentation, dissolve the priming sugar in a small amount of boiling water and add it to the fermented beer. Bottle the beer using clean, sanitized bottles.

Bottling

Cap the bottles and let them carbonate at room temperature for about 1-2 weeks.

Carbonation

Once carbonated, chill the bottles in the refrigerator. Pour into a glass and enjoy your homemade Rolling Rock beer!

Chill and Serve

If desired, add the coriander and orange peel to the wort 15 minutes before the end of the boil for a subtle flavor enhancement.

Freshly harvested spruce tips from upstate NY give this beer a beautiful delicate piney flavor and Chinnok hops back up the evergreen flavor profile.

SX Spruce Tip Saison

Saison brewed with pilsner malt and flaked rice to lighten the body. New school german hop additions.
