Mill the Pale Malt, Crystal Malt, and Carapils Malt together to create a fine grain mixture.

Milling the Grains

In a large brew kettle, heat 5 gallons of water to approximately 165°F (74°C) for mashing.

Heating the Water

Add the milled grains to the heated water and hold the temperature at around 152°F (67°C) for 60 minutes.

Mashing Process

After mashing, sparge the grains with hot water to collect approximately 6.5 gallons of wort.

Sparging the Grains

Bring the wort to a boil and add Centennial hops. Boil for 60 minutes.

Boiling the Wort

At 15 minutes before the end of the boil, add Citra hops. At 5 minutes before the end of the boil, add Simcoe and Amarillo hops.

Adding Hops

After the boil, cool the wort quickly to around 70°F (21°C) using a wort chiller.

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast.

Pitching Yeast

Seal the fermenter and allow the beer to ferment for about 1-2 weeks at 68-72°F (20-22°C).

Fermentation

Once fermentation is complete, prepare bottles and priming sugar if bottling.

Bottle the beer, ensuring to leave some space at the top, and cap the bottles.
