In a large mash tun, heat 4 gallons of filtered water to 165°F (74°C). Add the pale malt and caramel malt, stirring well to ensure all grains are wet. Maintain the temperature at 150-155°F (65-68°C) for 60 minutes.

Mashing the Grains

After mashing, sparge the grains with the remaining 1 gallon of hot water (170°F/77°C) to collect the wort in a brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. Add Amarillo hops with 15 minutes left in the boil and Citra hops with 5 minutes left.

Boiling the Wort

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast and seal the vessel with an airlock. Ferment at 68-72°F (20-22°C) for 1-2 weeks.

Fermentation

After fermentation is complete, gently stir in the mango puree and let it sit for an additional 3-5 days to infuse the flavor.

Adding Mango Puree

Prepare bottles by sanitizing them and mixing priming sugar with a small amount of boiled water. Add the priming sugar solution to the beer, then fill the bottles, leaving some space at the top. Cap the bottles.

Bottling

Store the bottles at room temperature for 1-2 weeks to allow carbonation to develop, then refrigerate before serving.
