Fit Turkey Wrap

This brown ale features fewer hops for a less bitter taste, a blend of light and dark malts for a unique, smooth flavor.

In a large brew kettle, heat 5 gallons of filtered water to approximately 165°F (74°C). Add the pale malt, crystal malt, and chocolate malt to the water. Stir well and maintain the temperature between 150°F (65°C) and 160°F (71°C) for 60 minutes.

Mashing the Malts

After mashing, sparge the grains with hot water (about 170°F or 77°C) to collect the wort. Aim to collect around 6 gallons of wort in your brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add the Fuggle hops and boil for 60 minutes. 30 minutes into the boil, add the East Kent Goldings hops.

Boiling the Wort

After the boiling process, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the ale yeast into the wort and seal the vessel with an airlock. Let it ferment in a dark, cool place for about 1 to 2 weeks.

Fermentation

After fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water. Add this priming solution to your bottling bucket. Transfer the beer from the fermentation vessel to the bottling bucket, mixing gently to avoid oxidation.

Bottling

Fill sanitized bottles with the beer, leaving about an inch of headspace. Cap the bottles and let them condition at room temperature for about 2 weeks.

Bottling and Conditioning
