In a large brew kettle, heat 5 liters of filtered water to 165°F (73°C). Add the Pale Malt, Crystal Malt, and Chocolate Malt. Stir to combine and let it rest for 60 minutes.

Prepare the Mash

After 60 minutes, sparge the grains with hot water to collect the wort, bringing the total volume to about 6 liters.

Bring the wort to a rolling boil. Once boiling, add Amarillo Hops and boil for 60 minutes.

With 15 minutes left in the boil, add Citra Hops, Simcoe Hops, and Mosaic Hops.

Add Flavor Hops

After the boil, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a fermentation vessel and pitch the American Ale Yeast. Seal and airlock the fermentation vessel.

Pitch Yeast

Dissolve the corn sugar in a small amount of boiling water and add it to the fermented beer before bottling.

Use a bottling wand to fill bottles, leaving some headspace. Cap the bottles and store them in a cool, dark place for carbonation.
